Cocoa-Nut Almond Butter – Vegan Recipe

The recipe was a pleasant surprise for me, which I found in the Twister Jar Recipe Book that came with my Blendtec Twister Jar. The Twister Jar is a specialty jar made for the Blendtec Blender, which makes making nut butters and flour a bit easier. As you can see it also makes making specialty recipes easier also.

Now I do have to say that this recipe will serve as a treat for me and is not a staple of my vegan diet. The recipe calls for sugar, and I do limit the amount of foods that I eat that contain additive sugar, even if it is natural sugar.

This cocoa-nut almond butter is really good. I made some this past weekend and brought it to a friend’s home to serve as a snack while we watched some boxing matches. We all enjoyed the cocoa-nut almond butter, which I call a fudge because it has that type of taste. I felt a little guilty because my friend’s wife really like the fudge and she kept going to back for more of the sweets. I am careful to not eat so much at one time because it contains additive sugar. Anyway, the fudge was a huge success.

Cocoa-Nut Almond Butter – Vegan Recipe

Ingredients

  • 1 1/4 cup Raw Almonds (The recipe calls roasted almonds but I only had raw almonds)
  • 2 tablespoons Cacao Powder
  • 2 tablespoons Coconut Oil (The recipe calls for unsweetened coconut flakes to be used with roasted almonds. Since I didn't use roasted almonds, I used coconut oil with the raw almonds)
  • 3 tablespoons Coconut Sugar (The recipe calls for any granulated sugar)
  • 1/8 teaspoon Himalayan Salt (The recipe calls for kosher salt)

I usually use my Blendtec Blender to make all natural vegetable and fruit juices, but I recently bought Blentec’s “Twister Jar” to use with my Blendtec blender so I could more easily make nut butters and flour. I have to thank Blendtec for this recipe. The Twister Jar came with a a recipe book that contained a couple of interesting recipes. I came upon the hummus recipe and I was interested!

So I went ahead and made it and it tasted good, but I could have just thought that because I made it. Fortunately I had a good opportunity to see if others would think the same thing. I visited a friend and his wife last night and we watched some boxing fights and ate the hummus with spelt bread, a coco almond fudge I also made, and we drank some banana date fruit juice. We will get into the fudge in another post.

Anyway, they were a little skeptical of everything brought over but in the end the loved and raved about the hummus, and also the fudge and juice. I was a bit surprised about how much they liked it. They had both each eaten just a little while before I arrived, and they still went back for second and thirds of the hummus. I have to say it turned out pretty good. Vegan, raw, and awesome!



Roasted Red Pepper Hummus – Vegan Recipe

Ingredients

  • 2 tablespoons Olive Oil
  • 2 tablespoons Fresh Lemon Juice
  • 2 tablespoons Tahini
  • 1 clove Garlic
  • 15 oz Garbanzo Beans (Drain and keep the liquid)
  • 3 - 4 tablespoons Garbanzo Bean Liquid
  • 1 cup Roasted Red Bell Pepper (I heated fresh the bell pepper in the oven the dry it out)
  • 1/2 teaspoon Kimalayan/Sea Salt
  • 1/2 teaspoon Ground Cumin
  • 1/8 teaspoon Cayenne Pepper
  • 1 Blendtec or high speed blender

This drink has a favorite of mine for my lunch, and I like to drink it before and sometimes after workouts. The “Banana Date Energy Drink” is high in:
1. Simple carbohydrates which quickly convert to energy
2. Fiber
3. Electrolytes to support muscle function: potassium, phosphorus, and sodium
4. Essential fatty acids to support body functioning
5. Vitamin B6, vitamin C, manganese it also contains a wide range of other vitamins and minerals


Oh, it also tastes pretty good. :)

Banana Date Energy Drink

Ingredients

  • 2 Bananas
  • 2 Medjool Dates
  • 1 tablespoon Cacao Powder
  • 2 heaped tablespoons Chia of Flax Seeds
  • 5 tablespoons Coconut Milk
  • 1/4 teaspoon Himalayan or Sea Salt
  • 1 cup Water

Directions

Step 1
Add all of the ingredients to the blender and blend. That's it. :) Enjoy!

I am going to show you how to make my goji-berry curcumin drink. I call it my brain body energizer. It consists of 1/4 cup of goji berries, 1 capsule of curcumin, 2 tablespoons of cocunut milk, and 1 cup of alkaline water.

I use goji berries because they are an excellent antioxidant and alkalizer of the body. Studies have shown than a acidic body is a great environment for promoting and sustaining disease. The fluids in the body, the blood, should be at a pH level of 7.4, and as Dr. Vega showed in his goji berry video, goji berries raise the pH level in the body by fighting acidity.
